An Introduction – and Observations.
It’s crossed my mind that having a “Food Blog” is something akin to being one of the most dreaded things in the Culinary world – a Restaurant Critic. No matter how well intentioned it is, you’re always going to be looked at with something akin to suspicion, because let’s face it – you’re the enemy in many regards.
So let’s get something out from the start – I’m not the enemy. I’m someone that despite being “trained” via Culinary school, I actually retain my love for food, and the places that make it for me. But, I will be critical when I review a Product or Location, because frankly I refuse totally to tell people I consider to be my friends (even though we’ve never met, and probably never will) to try something based only on the “Posh” factor. It has to TASTE good, because that’s the end all, be all of good food.
Why do I even bother to say all this? After all, I could probably just go on and on about Food and care less about what people thought. Well, to me – it’s all about trust. I want my readers to trust my opinions, and I want them to trust that I will tell the truth about food, whether good or bad. I don’t want to be like some of the guest tasters on Iron Chef America, proselytizing about things such as Texture – I want your taste buds to “pop” based on the actual flavor of the dish or product. Yes, Texture, Aroma, etc all have their place is building the Flavor. However, too many critics/experts treat these as main players, and will compliment a dish that tastes like crap just because the other elements were “perfect”. I will not be doing that.
Will it kill any chance I have of EVER being a taster on IC America? Probably. But it will let the rest of you know I am on your level, and that you can trust that if I say it’s good – it will be, period.
